Oven and Shaker, located within the newly designed $2 billion Portland International Airport terminal, is a dining destination that seamlessly blends sustainability, design, and Portland’s culinary identity. The project was developed in alignment with the terminal’s overarching goal of integrating sustainable practices into every aspect of its design, creating a space that feels both modern and deeply rooted in the local community. Oven and Shaker is a successful example of how thoughtful design can meet sustainability without compromising on style or functionality. This project not only enhances the dining experience at Portland International Airport but also stands as a testament to the importance of creating spaces that respect both people and the planet.
THE APPROACH
The design of Oven and Shaker reflects the airport’s commitment to environmental responsibility by incorporating locally sourced woods, reclaimed metals, and recycled porcelain tiles throughout the space. The careful selection of materials minimized plastic usage while maintaining the brand’s bold, industrial aesthetic. This sustainable approach was key in maintaining the integrity of the restaurant’s identity, blending eco-conscious choices with a modern, inviting atmosphere.

The integration of the terminal’s signature slat ceiling element presented an opportunity for creative collaboration. The design team carefully considered the slat ceiling when sourcing finishes, furniture, and artwork, ensuring a cohesive flow between the architecture of the terminal and the restaurant's interior design. The result is a space that feels both contemporary and connected to the larger terminal design, offering a seamless experience for travelers.
A standout feature of the restaurant’s design is the to-go area, which incorporates a faux storefront inspired by Portland’s local streetscapes. Reclaimed brickwork and neon signage evoke the charm of neighborhood dining spots, bringing a unique and familiar feeling to the airport environment. This thoughtful design element enhances the customer experience, offering a sense of place even in a transient setting.

Oven and Shaker’s design showcases Portland’s spirit through artful details that invite travelers to connect with the city. A reclaimed wood panel wall features a burn-etched mural of Mount Hood, capturing the beauty of the Pacific Northwest with texture and depth. The design mimics a classic postcard, offering a perfect selfie moment and creating a memorable experience for guests. Small red logo accents are subtly integrated throughout the space, including behind the banquettes, at the host stands, and at the footrests of the chairs, reinforcing the brand’s identity while adding vibrancy to the industrial design. These thoughtful elements—combined with the mural’s iconic image—create a harmonious, welcoming atmosphere that reflects both the landscape and the brand Oven and Shaker.
